So, being that today is the start of Hanukkah, I thought it appropriate to post something related to it:). And, since this is our first year celebrating Hanukkah, we thought, what better way to celebrate than to make latkes from scratch. These latkes were made vegan so that everyone could enjoy them since my mom is a vegan herself.
Dash of salt
1 onion, diced(you may need to change the ratio, depending on how many potatoes you use. I used 8)
Peeled potatoes (1 large potatoe per person is a good way to know how many you’ll need)
Slice the potatoes in half, and add them to a blender or food processor to purée them. Sprinkle some seasonings into the mixture, and add the onions and salt. Mix together. Spoon latkes in a hot pan that has been coated with oil. Cook on high for about two minutes on each side.
