Hey guys! So, because it’s fall, and of course that means it’s pumpkin season, I’ve been wanting to try making something new with pumpkins. Originally, I had wanted to make some chocolate pumpkin fudge, so found a yummy looking recipe on Pinterest, but it actually ended up tasting like chocolate bars with pumpkin. And, it was delicious! So, I decided to share this very yummy chocolate pumpkin bar recipe with you all. Enjoy!
1 cup and four tablespoons of chocolate chips
1/4 teaspoon of nutmeg
1/2 teaspoon of vanilla extract
3/4 teaspoon of ginger
1 teaspoon of cinnamon
6 tablespoons of coconut oil
15 ounces of canned pumpkin puree
Melt the coconut oil and chocolate chips in a pot on the stove until it is of a liquid consistency. Then add it to a medium sized bowl and mix in the pumpkin puree, vanilla extract and the spices. Keep stirring the mixture for about a minute or until mixture no longer appears very oily. Line a 9×13 inch pan with wax paper and spread the chocolate/pumpkin mix evenly in the pan. Place in the freezer for about one hour.
